Have you ever heard of the story behind Third Wave Coffee? Third Wave Coffee is essentially the process of choosing the beans and buying directly from a farmer, roasting the beans in house, and eventually serving individually dripped cups of coffee. This style has grown across the world and into Japan.

Blue Bottle’s founder, James Freeman, was actually inspired to create his store during his travels in Japan, when he came across a coffee shop that served individually dripped cups of coffee. In some ways you could say that what has become a world famous brand originated in Japan.

Perch has ridden this new wave of coffee popularity in Tokyo, opening a roaster near Yoga-station in 2013, a second donut store a few years later, and finally opening the Daikanayama location in 2016.

The modern style cafes like perch are beginning to replace the older style Japanese coffee houses that were at one time in vogue.
