Usami Shoten has been making nukadoko for 100 years since the Taisho era and has kept the original taste alive to this day. Nukadoko is a nutrient-rich salted rice-bran paste for pickling. It has a sweet umami flavor mixed with Japanese pepper and spicy chili peppers and which creates the perfect side dish of pickles for a bowl of rice or a snack to go with a glass of sake.

100 Nenndoko also specializes in nukadaki, which is a local dish that’s made with blueback fish boiled in seasoning and finished by adding nukadoko.
