Daruma-do is the birthplace of yaki udon. Made with pork, onions, cabbage, udon, and fish sauce, it’s the taste of Kitakyushu -- the soul food of the common folk. They started making yaki udon when they ran out of yakisoba noodles and decided to use dried udon instead. After preserving that same taste for 76 years, it’s become a specialty of Kokura.
